Crispy Oven-Roasted Green Bean Fries Recipe

I know — I just mentioned yesterday that I’d been seeing way too much green.

This is an exception. I received a bunch of requests for the roasted green beans from Mr. How Sweet’s birthday dinner, so I had to share the method.

Here’s the thing: these don’t really taste like green beans. They barely taste like vegetables. They taste more like French fries, which explains why I love them so much.

This isn’t really a formal recipe so much as a foolproof method. It’s simple and reliable. Believe it or not, I liked them so much that I made a batch at 6 a.m. the morning after eating them — before work. Yes, that really happened, and yes, they were worth it.

Roasted Green Beans

Ingredients:

1 lb fresh green beans

Drizzle of olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

Method:

Preheat the oven to 425°F (220°C).

Place the green beans in a bowl and drizzle with a small amount of olive oil. Toss with your hands to coat each bean evenly. Spread them in a single layer on a baking sheet and season with salt and pepper.

Roast for 25–30 minutes, turning once halfway through, until the beans are browned and slightly crisp at the edges.
