To prepare the roasted turkey breast, mix softened butter with brown sugar, salt, pepper, smoked paprika, oregano and garlic into a spreadable paste. Rub it over the breast, gently working some under the skin where possible.

Place the breast on a wire rack set over a baking sheet and roast for roughly 90 minutes for a 3–4 pound breast, rotating the pan once during cooking. Roast until the internal temperature reaches 165°F, then let the turkey rest for about 30 minutes before carving.

Reserve the pan drippings and strain them through a fine-mesh sieve. Use them with stock to make a smooth, flavorful gravy — the drippings provide depth while the stock and a flour slurry give body and richness.

Ingredients

  • 1 (3 to 4 pound) bone-in turkey breast
  • 4 tablespoons unsalted butter softened
  • 1 tablespoons brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 2 garlic cloves, minced
  • fresh herbs, for serving

  • drippings from the turkey – anywhere from ¼ cup to ⅔ cup
  • 16 ounces chicken or turkey stock
  • 3 heaping tablespoons all-purpose flour

Instructions

  • Preheat the oven to 350°F. Set a wire rack on a baking sheet or use a roasting pan fitted with a rack.
  • Let the turkey sit at room temperature for 30 minutes. In a bowl, combine the butter, brown sugar, salt, pepper, smoked paprika, oregano and garlic until you have a spreadable paste.
  • Place the turkey breast on the rack and rub the butter mixture all over the surface, gently lifting the skin and working some of the butter underneath where possible.
  • Roast for about 90 minutes for a 3–4 pound breast, rotating the pan once during cooking. Cook until the internal temperature reaches 165°F. Remove and rest the turkey for 30 minutes before slicing; use the resting time to make the gravy.
  • For the gravy, strain the pan drippings through a fine mesh sieve into a bowl to remove any large solids.
  • Warm the strained drippings in a saucepan over medium heat. In a separate container, whisk the stock and flour together until smooth to form a slurry.
  • Slowly whisk the slurry into the warm drippings, stirring constantly to prevent lumps. Continue cooking and stirring until the gravy thickens, about 10–20 minutes, making sure to scrape the bottom of the pan.
  • Season the gravy with salt and pepper to taste. The drippings and stock provide base flavor, but proper seasoning brings it all together.
  • Keep the gravy over low heat and stir often until serving. Store leftovers in the refrigerator for up to a week; reheat gently in a saucepan with a splash of stock or water, stirring until smooth. Gravy often tastes even better the next day.
