Ingredients

  • 6 cups water
  • 3 cups chopped peaches
  • 1 cup sugar
  • 1 1/2 cups fresh lemon juice
  • 2 peaches sliced for garnish
  • 2 lemons sliced for garnish
  • 1 bag frozen peaches for serving (to use as ice)
  • cajun seasoning for the rim
  • fresh oregano for serving

Instructions

  • Heat the water, chopped peaches and sugar in a saucepan over medium heat. Bring to a boil, then reduce to a simmer and cook for 5 minutes. Remove from heat and let cool slightly.
  • Carefully transfer the mixture to a blender and puree until smooth. Pour into a jar and refrigerate for a few hours or overnight.
  • Once chilled, strain the peach puree through a fine mesh sieve into a large bowl or measuring cup to remove solids, pressing with a spoon to extract all the juice.
  • In a large pitcher, combine the strained peach juice with the fresh lemon juice. Refrigerate for at least 1 hour. Taste and add more lemon if needed. Add lemon wedges and peach slices to the pitcher.
  • Place about a tablespoon of Cajun seasoning on a plate. Rub a lemon wedge around the rim of each glass and dip the rim into the seasoning to coat. Fill glasses with ice.
  • Pour the lemonade over ice and garnish with peach slices, lemon slices and fresh oregano. Serve chilled.
