Ingredients

  • 1 ½ cups all-purpose or whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon

  • 1 cup plain Greek yogurtfull fat or 2%
  • 2 tablespoons honey
  • 2 tablespoons fresh citrus zestlemon, orange, grapefruit
  • 2 tablespoons coconut oilmelted
  • 2 teaspoons vanilla extract
  • butter or coconut oil for cooking

for serving:

  • extra Greek yogurt
  • 1 blood orange peeled and segmented
  • 1 cara cara orange peeled and segmented
  • 2 teaspoons blood orange, orange or lemon juice
  • 1 tablespoon honey
  • powdered sugar if desired

Instructions 

  • In a large bowl, whisk together the flour, baking powder, salt and cinnamon.
  • In another bowl, whisk the milk, Greek yogurt, honey, citrus zest, melted coconut oil and vanilla until smooth. Pour the wet ingredients into the dry and whisk until mostly smooth with only a few lumps remaining.
  • Heat a large skillet or electric griddle over medium heat. Add a little butter or coconut oil if desired. Pour about 1/4 cup batter per pancake onto the hot surface, leaving space between them. Cook until bubbles appear on the top and the edges look set, about 2 minutes. Flip and cook another 1–2 minutes until golden and cooked through.
  • To warm the citrus, place the segmented citrus and juice in a small saucepan over low heat with the honey. Stir gently and heat just until warmed through—do not overcook or the citrus will become mushy.
  • Serve the pancakes topped with extra Greek yogurt, the warm citrus, and a drizzle of maple syrup or honey. Finish with a light sprinkle of powdered sugar if desired.
