Start the week with a bright and creamy broccoli lemon carbonara — a surprise favorite that feels both cozy and fresh.

For Taco Tuesday, try a slow-cooker chicken taco soup topped with cheesy quesadilla croutons for extra comfort and crunch.

Midweek, enjoy pork Milanese with lemony arugula. It’s light but satisfying, and the leftovers are great for sandwiches or salads.

A cheeseburger chopped salad brings all the favorite flavors of a burger in a lighter, chopped format — perfect for a family-friendly dinner.

For a simple, flavorful entrée, make hot honey roasted salmon. Pair it with lemon-butter spaghetti squash for a seasonal side that’s silky and bright.

Round out the week with a Mediterranean kale salad tossed with quinoa — hearty enough for a weekend meal, and it tastes even better the next day.

For breakfasts, I’m prepping a batch of salted maple granola to keep mornings easy and delicious. Lunches will feature green goddess tuna melts for a creamy, herby twist on a classic.
