Because it’s been unusually warm here — yesterday felt like 70°F — I decided to create our own white Christmas. I want snow now (but not an April mess!), so a coconut‑white margarita felt like the perfect compromise.

These margaritas are delightfully deceptive: aside from a few floating cranberries and rosemary sprigs for decoration, they’re actually coconut cream margaritas. Think island vibes with holiday flair.
I didn’t want to go the obvious white chocolate or sugar‑cookie route — too much. I’ve used this coconut margarita base before (it was the backbone of my red, white, and blue margaritas for the 4th of July) and it’s always a hit. It’s creamy, bright, and festive without being cloying.

One note about the garnish: treat the rosemary as purely decorative. Don’t stir drinks with it or crush it into the margarita — it’s there for looks and aroma. It’s one of those rare times I let decoration win over practicality because it’s so pretty and seasonal.

Ingredients
- 10 ounces silver tequila
- 8 ounces Grand Marnier
- 8 ounces lime juice
- 8 ounces coconut water
- 8 ounces canned coconut milk
- 6 ounces coconut cream
- 6 ounces coconut rum
- 6 ounces simple syrup
- 1 teaspoon coconut extract, if desired
- for garnish: sprigs of rosemary and fresh cranberries

Combine all ingredients thoroughly. For a large, creamy batch, mix in a large measuring cup or bowl and whisk until smooth rather than shaking. If you want more pronounced coconut flavor, add 1–2 teaspoons of coconut extract. Taste and adjust sweetness with additional simple syrup if needed.

To make simple syrup: combine equal parts granulated sugar and water (for example, 1 cup sugar and 1 cup water) in a saucepan over medium heat. Whisk until the sugar dissolves and the mixture comes to a simmer, then remove from heat and cool completely before using.
