The secret to an exceptional risotto is toasting the rice in butter with the onion and garlic first. That toasting step adds a nutty, slightly browned-butter flavor that elevates the whole dish. After the rice is toasted, add the carrots and celery, then slowly ladle warm chicken broth into the rice, stirring as it absorbs.

Risotto does require a bit of hands-on time to stir in the stock gradually — this is what creates the creamy texture. The process is worth it for the rich, velvety rice you get at the end.
When the rice is tender and creamy, stir in the cooked chicken, freshly grated Parmesan, a squeeze of lemon for brightness, and chopped parsley. Taste and adjust seasoning, then serve immediately with extra Parmesan and parsley if desired.

Ingredients
- 64 ounces Simply Nature Organic Chicken Broth
- 2 tablespoons Simply Nature Organic Unsalted Butter
- 1 tablespoon Specially Selected Extra Virgin Olive Oil
- 1 sweet onion, diced
- 3 garlic cloves, minced
- Kosher salt and pepper, to taste
- 1 ½ cups Earthly Grains Long Grain White Rice
- ⅔ cup diced carrots
- ½ cup diced celery
- 2 cooked Simply Nature Organic Chicken Breasts, chopped
- ½ cup freshly grated Emporium Selection Parmesan Cheese, plus extra for serving
- ⅓ cup chopped fresh parsley, plus extra for serving
- 1 tablespoon freshly squeezed lemon juice
Instructions
- Pour the chicken broth into a saucepan and keep it warm over low heat.
- Melt the butter and olive oil in a large pot. Add the onion and garlic with a big pinch of salt and pepper. Stir in the rice and cook, stirring often, until the rice is translucent and lightly toasted, about 5 minutes.
- Stir in the carrots and celery and cook for 2 minutes.
- Add 1 ½ cups of the warm stock, stirring continuously until absorbed. Add another cup, stirring until absorbed. Continue adding 3 to 4 more cups of stock, a ladle at a time, stirring until the rice is creamy and al dente. There should still be some liquid in the risotto when serving. This takes about 15–20 minutes.
- Stir in the cooked chicken and Parmesan. Add the parsley and lemon juice. Taste and adjust salt and pepper as needed.
- Serve immediately, sprinkled with extra Parmesan and parsley.
