I love an easy meatless meal—especially when it comes together without much planning.

Sometimes a meatless dinner happens simply because I throw together what sounds good, and before I know it, a flavorful vegetarian meal is on the table. That’s exactly how these cauliflower pitas came to be.

The pitas are warm and pillowy, spread with hummus, piled with spicy, toasty chipotle cauliflower and finished with a sprinkling of feta. Simple, bold flavors and texture contrast make them truly delicious.
Delicious and satisfying

I often roast cauliflower with chipotle chili powder and sometimes top it with cheddar, but for these pitas the cauliflower is the star. The florets are tossed with olive oil, chipotle chili powder, garlic powder and smoked paprika, then roasted until golden and slightly caramelized. Roasting brings out a toasty, almost nutty flavor that makes cauliflower irresistible—you might even find yourself snacking from the baking sheet.

Homemade pita bread is wonderful—soft, fluffy and more flavorful than store-bought. If you have the time and enjoy baking, make the pitas ahead; they’re worth the effort. But if you want a quick meal, quality store-bought pitas work perfectly and save time.

If you make the pitas yourself, do that first—you can even prepare them a day ahead. If you’re short on time, buying pitas is a practical choice and won’t compromise the flavors of this dish.
Quick assembly

Once the cauliflower is roasted and the pitas are ready, these sandwiches come together very quickly. Aside from the cauliflower, you really only need hummus, crumbled feta and a handful of microgreens or spring greens.

The toppings are flexible: use your favorite hummus flavor—classic, roasted garlic, red pepper—whatever you prefer. Spread the hummus inside the pita, add a few spoonfuls of the chipotle cauliflower, sprinkle with feta and top with greens. That’s it: a simple, flavorful weeknight or weekend meal.

Ingredients
- 1 head cauliflower, chopped into florets
- 1 tablespoon olive oil
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon garlic powder
- ¼ teaspoon smoked paprika
- kosher salt and pepper
- 4 to 6 pita breads
- 1 cup hummus, for spreading on pitas
- ½ cup crumbled feta cheese
- a few handfuls of microgreens or spring greens for topping

If making homemade pitas, prepare them first; they can be made ahead.

Preheat the oven to 425°F (220°C).

Arrange the cauliflower florets on a baking sheet and drizzle with olive oil; toss to coat. In a small bowl, mix chipotle chili powder, smoked paprika, garlic powder, salt and pepper. Sprinkle the spice mix over the cauliflower and toss until evenly coated. Roast for 20 to 25 minutes, stirring once halfway through, until the edges are golden and crisp-tender.

To assemble each pita, spread about 1/4 cup hummus (or to taste) inside the pita. Add several spoonfuls of roasted cauliflower, sprinkle with crumbled feta and finish with a handful of microgreens or spring greens. Serve immediately.
