Do I know how to make (or drink) anything other than a margarita?
The honest answer is: yes…and no.
Why would I want to give it up?

One of my all-time favorites is the watermelon mint margarita from Seriously Delish. Full disclosure: I can’t stand the abbreviation “marg.” But sometimes, in the age of shortcuts, I might call it that anyway.

Last week I was deciding between my watermelon mint margarita and a glass of rosé. Then I realized—why choose? I could combine them in one glass. It felt inspired, like a summer mashup: the bright freshness of watermelon and the light fruitiness of rosé together in a margarita.
I’d recently made rose champagne mojitos with homemade champagne syrup and loved them, so I knew a rosé element would work nicely with watermelon. And in August heat, watermelon is practically a necessity. I might also have a small obsession with anything watermelon-related.

Let’s talk about the quick watermelon rosé syrup you’ll make in minutes. It’s simple, bright and adds a lovely pink color to the drink. You’ll want a straw.

One playful touch: frozen peach slices as ice. I used frozen peach slices—the same trick I used for a pineapple peach agua fresca—to keep the cocktail chilled without diluting it too quickly. Add crushed ice too, and the drink stays perfectly crisp.
I’m a sucker for pretty drinks. If it looks gorgeous, I’m already halfway sold. But with this cocktail, the appearance matches the taste: it’s summery, light, slightly sophisticated and very refreshing. Picture sipping it on a patio at sunset—relaxed and just a little bit fancy.

Watermelon Rosé Margaritas

Ingredients
- coarse salt for the rim
- 2 ounces silver tequila
- 1 1/2 ounces Grand Marnier
- 1 ounce fresh lime juice
- 2 ounces watermelon rosé syrup, recipe below
- 2 ounces watermelon juice
- 2 ounces rosé wine
- frozen peaches, for serving
- lime wedges, for serving and garnish
- melon balls, for garnish
watermelon rosé syrup
- 1/2 cup rosé wine
- 1/2 cup fresh watermelon juice
- 1 1/4 cups sugar
Instructions

Note: to make the watermelon juice, place a cup or two of fresh watermelon cubes in a blender and blend until pureed. Strain through a fine mesh strainer into a cup to remove solids and you have fresh watermelon juice.

Place salt on a plate. Rim a glass with a lime wedge and dip in the salt to coat. Fill the glass with crushed ice.

In a cocktail shaker with ice, add tequila, Grand Marnier, lime juice, syrup and watermelon juice. Shake for 30 seconds. Pour into the prepared glass and top with rosé wine. Garnish with frozen peach slices, lime wedges and melon balls. Serve immediately.

Combine rosé, watermelon juice and sugar in a saucepan over medium heat. Whisk constantly and bring to a gentle boil until the sugar dissolves. Remove from heat and let cool to room temperature; the syrup will thicken slightly. Store in the refrigerator for up to a few weeks.
