Frozen Irish Cream Cappuccino Recipes for Irresistible Summer Sips

It has already been a WEEK.

Give me a frozen Irish cream cappuccino and let’s call it a day.

Bailey’s is life.

Even though we just sprang forward this week, everyone in our house decided to stop sleeping. It felt like the babies conspired to throw a party from midnight until 5 AM.

Delightful. Not.

Maybe I need four frozen Irish cream cappuccinos. How would that go over?

What I love about this drink is that it’s not overly sweet. There’s no added sugar beyond the Bailey’s; while Bailey’s is sweet, the amount in these cappuccinos keeps them balanced. This isn’t an ice cream shake — it’s frozen, creamy, icy coffee and it’s just perfect.

Before I got pregnant with Max a few years back, I discovered the simple coffee Frappuccino at Starbucks — just frozen coffee, no whipped cream or sugary syrups. I fell in love with that restrained, slightly bitter chilled coffee. With a dash of cinnamon it’s almost refreshing: cold and icy without feeling like a milkshake. That’s what I wanted to recreate here.

I’ve been intrigued by Bailey’s since I was a kid. I wasn’t drinking it back then, but my parents would serve it with coffee or over ice at holidays and on weekends, and it always looked so indulgent — like daiquiris or frozen mudslides. When I finally tried it, I loved it, and I’m always looking for ways to use it. I even made my own Irish cream once, which was super simple.

Next week I’ll share another coffee recipe to celebrate The Pretty Dish launch and the first week of spring, but I couldn’t resist sharing something with Bailey’s now. If you’re planning meals or treats for Saint Patrick’s Day, there are plenty of options to pair with this drink — from Irish ale potato and cheddar soup to lobster corn fritters, homemade pub cheese, asparagus potato salad with hot bacon dressing, and s’mores stout milkshakes. For something sweet, there’s Irish soda bread, soda bread French toast with whiskey whipped cream, whiskey iced coffees, Guinness-spiced pretzels with Irish cheddar fondue, Guinness short ribs with cheesy cauliflower mash, lucky charms confetti cupcakes, cereal milk chia pudding with Lucky Charms crumbs, and one-bowl whiskey chocolate fudge cake. Plenty to choose from if you want a themed spread.

Looks like we’re having a party.
