Everything feels right because I’ve created the hummingbird mimosa — our new signature spring cocktail. Bright, bubbly and lightly spiced, it’s a delightful twist on a classic mimosa inspired by hummingbird cake.

This little flute delivers refreshing flavor: pineapple juice, orange juice and chilled sparkling wine finished with a cinnamon-sugar rim. It’s so delicious you’ll want to text your friends and host a spontaneous brunch just to make them.

At a recent spring brunch hosted by ALDI, I fell in love with ready-made mimosas they were serving. The bottles are already mixed and made with freshly squeezed juice — there’s an orange variety available through spring and summer, and a limited-time pineapple option. The convenience is incredible: one bottle gives you the entire cocktail, so you don’t need to juggle multiple bottles when you’re heading to a gathering or packing for a trip.

I’m obsessed with the concept. It’s easy, portable and perfect for sharing. Eddie and I enjoy the occasional mimosa, so having a single-bottle option is such a win — especially at the current price of $8.99 a bottle.

Inspired by those flavors and by hummingbird cake — which combines pineapple, orange, banana, coconut and cinnamon and is finished with cream cheese frosting — I created the hummingbird mimosa. While there’s no cocktail version of cream cheese frosting (yet!), the drink channels the cake’s warm, tropical notes. The cinnamon-sugar rim nods to the cake’s spice and makes each sip feel like spring.

The orange and pineapple combination is bright and refreshing. Paired with chilled champagne or prosecco and the cinnamon-sugar rim, it becomes a lovely seasonal drink that’s familiar yet new. If you’re short on time, you can use ALDI’s bottled mimosas in place of the juices and sparkling wine to speed things up even more.

Ingredients
cinnamon sugar rim
- 2 tablespoons sugar
- ½ teaspoon ground cinnamon
- orange wedges
mimosas
- 2 ounces chilled pineapple juice
- 1 ounce chilled orange juice
- 3 to 4 ounces chilled prosecco or sparkling wine
Instructions

Mix the sugar and cinnamon on a plate. Rub an orange wedge around the rim of a glass, then dip the rim into the cinnamon sugar to coat.

Pour the pineapple and orange juices into the glass, then top with chilled prosecco. Serve immediately.
