We’ve officially hit hot-coffee weather.

Although I’m usually an iced coffee person, I always make an exception for my favorite power coffee—especially in the afternoon.

Last winter I fell hard for the coconut chai power coffee and I still love it. This version swaps flavors for a salted maple twist.
Salted maple—seriously. I wasn’t always a maple person, but over the last year I’ve warmed up to it. I have to confess some inspiration came from the salted cream cold brew I couldn’t stop ordering this summer.

I usually add collagen to my coffee—it dissolves completely in hot liquid and blends right in, so you don’t taste it. It’s become part of my routine because it helps the drink feel more sustaining without extra jitters or crashes.
For years I limited myself to one cup a day because more than that leaves me shaky and tired later. This power coffee, with its added fats and a touch of protein, helps me savor a single cup without craving another.

One tweak I made for this recipe was swapping coconut oil for coconut butter. Coconut butter is the whipped, whole-meat of the coconut—rich, creamy and deeply coconutty. I love it straight from the jar, and it turns coffee into a smooth, frothy, nearly latte-like drink without dairy.

The combination of maple syrup, coconut butter and a pinch of sea salt creates a creamy, slightly sweet, and balanced cup that feels indulgent but simple. I usually add a splash of coconut cream or almond milk for extra silkiness, though it’s optional.
