I’m still in a food coma, probably wrapped in a cozy afghan and floating on a cloud of mashed potatoes. If you’re anything like me, you’re already dreaming of smothering leftover turkey, stuffing and potatoes with more gravy and enjoying another slice of pumpkin pie with fresh whipped cream.
But if you happened to get your fill of the traditional Thanksgiving meal, here’s a quick, tasty alternative: a turkey quesadilla you can put together in about 10 minutes.


Turkey, Brie & Cranberry Quesadilla
Serves 1
Ingredients:
- 2 whole wheat tortillas
- 3 ounces cooked turkey, shredded
- 2 tablespoons cranberry sauce
- 1 ounce brie cheese, chopped
Instructions: Preheat a skillet or griddle over medium-low heat. Lay one tortilla flat and sprinkle half the brie over it. Evenly distribute the shredded turkey and spoon on the cranberry sauce. Add the remaining brie on top and cover with the second tortilla. Ensuring cheese contacts both tortillas helps seal the quesadilla as it cooks. Place the assembled quesadilla in the skillet and cook 3–4 minutes per side, or until both sides are golden brown and the cheese is melted.

Simple and satisfying. If you have leftover stuffing, feel free to tuck a little inside the quesadilla for extra texture and flavor — I couldn’t resist doing that myself.
If you’d like more ways to use leftover turkey, you can substitute turkey into many favorite recipes such as BBQ quesadillas, sliders, nachos, enchilada lasagna, chopped chicken salad, or a southwest-style salad. Swap turkey for the chicken in any of those dishes for a delicious twist.
