It’s been a while since I wrote one of these posts, and after a hectic week—complete with a cake exploding in the oven, a cocktail mishap, and a day spent making lobster mac and cheese—I figured now was the perfect moment to share a few favorites.
Dinner last Sunday!
I’m completely obsessed with coconut, so these carrot, apple and coconut pancakes immediately caught my attention. I’m not the biggest fan of carrots, but paired with apple and coconut they sound irresistible.
Speaking of coconut and breakfast, I nearly squealed when I saw coconut-crusted French toast—crunchy, tropical, and decadent. Absolutely worth trying.
One more coconut item: slow-cooker coconut rice pudding. I’ve actually never had rice pudding, so this recipe is definitely on my to-try list.
To wash it all down, I’m eyeing a whipped root beer float cocktail—fun, fizzy, and nostalgic. Who wouldn’t want one?
If you prefer savory snacks, try homemade kettle chips with an onion-dill dip. They’re crispy, satisfying, and far superior to store-bought chips.
I’m also a sucker for anything s’mores-related, so homemade puffy cloud s’mores have my name written all over them. Light, gooey, and totally dreamy.
Sweet potato and goat cheese tater tots? Yes, please. The combination of sweet, earthy sweet potato with tangy goat cheese in tot form is the kind of twist that makes comfort food exciting again.
Frozen yogurt dots are adorable and snackable—perfect for a kid-friendly treat or a cool, portion-controlled dessert. The little hands happily waiting to eat them make them even sweeter.
For a sandwich that bridges sweet and savory, grilled cheese with mascarpone, apricots, and chocolate sounds unforgettable. It’s bold, creamy, and worth keeping for lunch forever.
And saving the best for last: spicy caramel bacon popcorn. Sweet, salty, spicy, and crunchy—this combination is dangerously delicious.
What’s the best thing you’ve discovered this week? Share it—I’m always on the lookout for new inspiration.
