Makes about 16 brownies

For the brownies:

1/2 cup flour
1/4 teaspoon salt
3/4 cup cocoa powder
1 1/4 cups sugar
10 tablespoons butter
1 teaspoon vanilla extract
2 eggs

Preheat oven to 325°F. In a small bowl, whisk together the eggs and vanilla and set aside. In a double boiler or heatproof bowl set over simmering water, combine butter, cocoa, sugar, and salt. Stir constantly until the mixture comes together into a smooth batter—this can take about 10 minutes, so be patient. Remove from heat and quickly whisk in the egg mixture until combined. Stir in the flour until smooth, then spread into a 6 x 10-inch baking dish (or similar). Bake for 20 minutes, then cool completely.

Pecan filling:

1/2 cup packed brown sugar
1/2 cup brown rice syrup (or corn syrup)
2 eggs
1 tablespoon vanilla extract
1/4 teaspoon cinnamon
1/4 cup butter, melted
2 tablespoons whiskey or bourbon
2 cups chopped pecans

With an electric mixer, beat the brown rice syrup and brown sugar until smooth. Add the eggs and vanilla, mixing until combined, then stir in the melted butter and whiskey. Fold in the chopped pecans, then spread this mixture evenly over the cooled brownie base. Bake for 30–35 minutes, until the pecan topping is set.

Let cool completely, then refrigerate for about 2 hours before slicing. Serve with freshly whipped cream.
