Cinnamon Sugar Roasted Almonds: Festive Holiday Appetizer Recipe

If you’re anything like me, walking through the mall during the holidays without buying a bag of cinnamon roasted almonds feels impossible. The warm, spiced aroma seems to follow you from kiosk to kiosk. I decided to recreate the treat at home to save money and have control over the texture and sweetness.

I picked up a large bag of raw almonds for under two dollars and set to work.

To get the cinnamon sugar to stick, I beat an egg white until foamy and used it as a light binder.

I combined granulated sugar, ground cinnamon, a pinch of salt, and raw turbinado sugar for a bit of crunch. The coarse sugar gives a lovely texture that mimics the candied shells you find at mall stalls.

After dipping the almonds in the foamy egg whites, I tossed them in the cinnamon sugar, making sure each nut was well coated.

I worked quickly and threw the almonds in all at once; a bit of impatience never hurt when the payoff is this good.

I spread the coated almonds on a baking sheet and roasted them until the sugar caramelized lightly and the almonds were fragrant.

The result was perfect: sweet, warmly spiced almonds with a pleasant crunch from the turbinado. They aren’t quite as hard as the mall’s brittle shell, but the flavor is spot on and far less expensive than buying them at a kiosk.

They made a great snack while I shopped my wardrobe for jeans that fit.

Ingredients

  • 1 cup raw almonds
  • 1/2 cup sugar
  • 1/8 cup cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup coarse sugar (raw turbinado recommended)
  • 1-2 egg whites, beaten until foamy

Instructions

  • Preheat oven to 275°F (135°C).
  • In a large bowl, mix granulated sugar, coarse sugar, ground cinnamon, and salt. In a separate bowl, beat the egg whites until foamy.
  • Dip the almonds in the egg whites, then toss them in the sugar-cinnamon mixture until coated. Spread evenly on a baking sheet.
  • Roast for 30–45 minutes, stirring or shaking the pan occasionally so the almonds toast evenly. Allow to cool completely before serving so the coating sets.
