Goat Cheese Fondue with Fried Sage

Ingredients

  • 2 garlic cloves, finely minced or pressed
  • 3/4 cup dry white wine
  • 3/4 cup heavy cream
  • 16 ounces goat cheese
  • a pinch each of salt, pepper and nutmeg

for dipping

  • bread, apples, fresh vegetables

fried sage

  • fried sage
  • 10-15 sage leaves
  • 3 tablespoons unsalted butter
  • 1 teaspoon olive oil

Instructions

  • In a small saucepan, combine the white wine and garlic and bring to a gentle simmer. Stir in the heavy cream, then add the goat cheese. Reduce heat to low and stir continuously for 8–10 minutes until the mixture is smooth and fully melted. Season with a pinch of salt, pepper, and a touch of nutmeg. Taste and adjust seasoning as needed.
  • While the cheese melts, heat a skillet over medium heat and add the olive oil and butter. When the butter is melted and bubbling, add the sage leaves and fry for one to two minutes, watching carefully so the butter doesn’t burn. Remove the leaves and drain on paper towel.
  • To serve, crumble a few fried sage leaves into the fondue and stir to distribute the flavor. Scatter the remaining sage on top for garnish. Serve immediately with bread, fruit, and vegetables for dipping.
