I first tried a version of this on a staycation in June, on one of the hottest days of the year. The cucumber mint margarita on the menu was so appealing; it reminded me of my cucumber vodka sodas. Ingredients
- Margarita salt for the rim
- Lime wedges
- Crushed ice
- 4 ounces Tequila (blanco preferred)
- 2 ounces Fresh lime juice
- 1 ounce Mint simple syrup (recipe below)
- A handful Cucumber slices
Mint Simple Syrup
- 1/3 cup Granulated sugar
- 1/3 cup Water
- 1 bunch Mint leaves
Instructions

Rim two glasses with a lime wedge and dip in margarita salt to coat. Fill the glasses with crushed ice.

Fill a cocktail shaker with ice. Add tequila, lime juice and mint simple syrup, then add a few cucumber slices. Shake vigorously for about 30 seconds — the shaking releases cucumber flavor and chills the drink. Strain or pour the mixture over the crushed ice in the prepared glasses. Garnish with extra cucumber slices and a sprig of fresh mint. Serve immediately.
Mint Simple Syrup

Combine sugar, water and mint leaves in a small saucepan. Heat over medium until it begins to simmer, stirring to dissolve the sugar. Reduce heat and simmer briefly until the syrup is clear and the sugar has dissolved. Remove from heat and let cool completely, then discard the mint leaves. Store chilled for up to two weeks.
