In case you’re wondering, I’m still in a cinnamon roll coma.
Today I wanted something different for breakfast — or snack, or lunch, or even dinner if you’re anything like me.
Most people might choose something savory like broccoli or eggs. I chose muffins.
Who doesn’t love creamsicles? Muffins? Cream? Heavy cream?
I adore anything labeled “creamsicle,” especially those Push-Up treats I used to devour during summer. Why did I ever stop eating them?
The only thing that improves a “healthier” muffin is a sweet, creamy glaze on top.
Creamsicle muffins finished with a creamsicle glaze? Yes, please.
Whole Wheat Creamsicle Muffins

Ingredients
- 2 cups whole wheat pastry flour, or all-purpose
- 1/3 cup sugar
- 1 egg
- 1/2 cup vanilla Greek yogurt
- 1/3 cup milk + 2 tablespoons
- 3/4 cup freshly squeezed orange juice
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1 tablespoons orange zest
- contents of one vanilla bean
- raw coarse sugar for garnish
Creamsicle Glaze
- 1/2 cup powdered sugar
- 1 tablespoon heavy cream
- 1 tablespoon freshly squeezed orange juice
- 1 teaspoon orange zest
Instructions

Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

In a bowl, mix the sugar, vanilla Greek yogurt and egg until creamy and pale. Stir in the vanilla bean seeds and vanilla extract.

Add the flour, baking soda and salt, then pour in the milk and orange juice. Fold in the orange zest and mix until the batter is smooth. Spoon the batter into the muffin cups and sprinkle the tops with coarse sugar.

Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool slightly before glazing.
Creamsicle Glaze

Whisk the powdered sugar, heavy cream, orange juice and zest in a bowl until smooth. Add a little more liquid if needed to reach a drizzling consistency. Drizzle the glaze over warm muffins.
