I’m definitely the first type — I thrive on the energy — but right now I also need an affogato drenched in espresso to get me through the season. The holidays are crazy, in the best way.

Let’s talk peppermint ice cream.
I picked up a pint of peppermint bark gelato — dangerous, because I could easily eat the whole thing in one sitting while bingeing a show — so I hid it in the back of the freezer on purpose. Worth it, because it became this affogato.
This peppermint ice cream is almost like soft serve in a pint, only better.

Pour a hot shot of espresso over the ice cream and you’ll be in heaven. It’s simple and transformative.
To make it extra festive I top mine with chopped peppermint bark for texture — crunchy, creamy, cool. As the ice cream melts into the espresso you can spoon or sip the mixture, and it really satisfies that craving for coffee that tastes like dessert.

This is embarrassingly easy but incredibly satisfying. I prefer it to peppermint mochas, and it’s great with a splash of something boozy — amaretto, whiskey, or peppermint schnapps if you like. Use whatever you prefer.

- 1/2 cup peppermint ice cream
- 1 or 2 shots of espresso
- 1 tablespoon chopped peppermint bark
Instructions

Scoop the ice cream into a glass. Pour one (or two) hot espresso shots over it. Sprinkle with chopped peppermint bark and enjoy. That’s it — simple and delicious.
