Grilled Chicken, Bacon & Spinach Flatbread Pizza Recipe

I didn’t cheat on my Lenten promise to give up bacon.

I’ve been dreaming about bacon ever since I created some incredible bacon-forward recipes this past week. Even though I’m abstaining, my brain is on bacon overload.

A few weeks ago I made this flatbread pizza alongside a roasted vegetable and goat cheese flatbread. If you don’t believe me, ask Caitlin—she happily ate some with me.

I have wanted to make it again ever since. Call me a glutton; I won’t argue.

The best part was seasoning the dough and giving it a short bake before adding toppings. It puffs up just a touch for a flatbread, but I’ll call it what I want.

It’s my dough and I’ll cry if I want to.

Before adding the chicken and bacon, I made an outrageously delicious spinach mixture. I sautéed fresh spinach with garlic, then stirred it into softened cream cheese and a generous amount of Parmesan to create a creamy green “sauce.”

Mr. How Sweet took one look at the green cream and insisted that “that stuff” better not go on his pizza. Clearly this was his pizza—he wouldn’t eat pizza with only vegetables and no meat. We have sharing issues in this house, which I’m taking as practice for motherhood.

I used a little trickery and told him the spinach mix was meant for the vegetable pizza. He couldn’t resist bacon and chicken, and, as usual, one bite in he declared it delicious without ever asking about the creamy spinach.

This pizza is hearty and filling, layered with contrasting flavors.

Loaded with grilled chicken, crispy bacon, and plenty of golden, bubbly cheese—you can’t go wrong.

Grilled Chicken, Bacon and Spinach Flatbread Pizza

Ingredients

  • Flatbread Pizza Dough
  • 1 packet active dry yeast
  • 1 1/2 cups warm water
  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil

Flatbread

  • 6 oz grilled chicken, shredded
  • 6 slices bacon, fried and torn apart
  • 4 cups spinach
  • 2 tablespoons olive oil
  • 1 garlic clove
  • 1/2 block (4 oz) cream cheese
  • 1 cup Parmesan cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated smoked cheddar cheese

Instructions

Flatbread Pizza Dough

  • Mix yeast with warm water and let it become foamy, about 15 minutes. In a large bowl, combine about 2 1/2 cups of the flour with salt and Italian seasoning. When the yeast is foamy, add it to the flour and mix by hand, adding more flour if needed until a dough forms. Cover and let rise in a cool, dark place for about 2 hours.

Grilled Chicken, Bacon and Spinach Flatbread Pizza

  • Preheat the oven to 375°F (190°C).
  • Divide the dough in half and spread each portion on a round pan or baking sheet. Bake the dough alone for 15 minutes, then remove and set aside.
  • Sauté the spinach in 1 tablespoon olive oil with the minced garlic until wilted. While still warm, combine the spinach with the cream cheese and 1/2 cup Parmesan, mixing until smooth and well combined.
  • Brush each par-baked crust with 1 tablespoon olive oil. Spread the spinach mixture evenly over the dough, then sprinkle with 1/2 cup mozzarella. Top with shredded grilled chicken and torn bacon pieces. Finish with the remaining Parmesan, mozzarella, and smoked cheddar.
  • Bake for 20–25 minutes, or until the cheese is golden and bubbly. Slice and serve warm.
