Start with a great pimento cheese — homemade or store-bought. A good pimento cheese is creamy, tangy and full of sharp cheddar flavor. It’s a versatile spread that works as a dip, a sandwich filling, or in dishes like tacos, grilled cheese, deviled eggs, sandwiches, poppers, BLTs, grits and quiche.

Waffle fries are ideal here because their ridges and holes hold the cheese, giving you a cheesy pocket with every bite. Pimento cheese often has a cream cheese base, so it melts into a lush, velvety layer rather than long strings — which in this case is perfect: think of it as a warm cheese blanket for your fries.

- 1 20-ounce bag frozen waffle fries
- ¾ cup pimento cheese (about half batch of a standard recipe)
- 3 tablespoons chopped fresh chives
- pickles for serving
Instructions

If making pimento cheese from scratch, prepare it first and set aside.

Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper.

Arrange the waffle fries in a single layer on the baking sheet. Bake for 20 to 25 minutes, or until the fries are very crispy and golden.

Remove the pan and dollop spoonfuls of pimento cheese over the hot fries, spreading as needed to cover evenly.

Return the pan to the oven for 4 to 5 minutes, just until the cheese softens and becomes melty.
