Ingredients

  • 1 20-ounce bag frozen waffle fries
  • ¾ cup pimento cheese (about half batch of a standard recipe)
  • 3 tablespoons chopped fresh chives
  • pickles for serving

Instructions

  • If making pimento cheese from scratch, prepare it first and set aside.
  • Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper.
  • Arrange the waffle fries in a single layer on the baking sheet. Bake for 20 to 25 minutes, or until the fries are very crispy and golden.
  • Remove the pan and dollop spoonfuls of pimento cheese over the hot fries, spreading as needed to cover evenly.
  • Return the pan to the oven for 4 to 5 minutes, just until the cheese softens and becomes melty.
  • Remove from the oven, sprinkle with chopped fresh chives and serve immediately with pickles on the side.
