Ingredients

  • 1 tablespoon olive oil
  • 12 ounces smoked turkey sausage, sliced into rounds
  • kosher salt and pepper
  • 2 bell peppers, chopped
  • 1 shallot, diced
  • 4 garlic cloves, minced
  • 1 ½ cups jasmine rice
  • 3 to 4 cups chicken stock
  • 4 green onions, thinly sliced

Instructions

  • Heat the olive oil in a large pot or skillet over medium heat. Add the smoked sausage rounds in a single layer and season with salt and pepper. Brown on one side, flip, and brown the other side. Transfer the browned sausage to a plate.
  • In the same skillet, add the chopped bell peppers, diced shallot, and minced garlic. Season and cook, stirring frequently, for 5 to 6 minutes or until the vegetables are softened.
  • Stir the jasmine rice into the vegetables and cook for 2 to 3 minutes to lightly toast the grains.
  • Return the sausage to the pot and add 3 cups of chicken stock. Bring to a boil, then reduce the heat to a simmer and cover. Cook for about 10 minutes, then check the rice. If it needs more liquid, add additional stock ½ cup at a time. Jasmine rice generally finishes in 10–20 minutes; other rice varieties may require more liquid and time.
