I have a quick and simple dinner idea for you that highlights two of my favorite ingredients: butter and cheese.

Some people insist cheese and fish don’t belong together. I disagree — cheese pairs beautifully with many things, fish included. If I could, I’d make a sandwich out of cheese on cheese bread and dip it in cheese soup.

If you remember the garlic basil butter I used for balsamic gnocchi, I realized it would be wonderful on fish — especially when finished with a little cheese.

Butter improves everything, and a modest amount of butter and cheese on each fillet keeps this dish light enough for a healthy weeknight meal. The portion on each piece is less than a tablespoon, so you still get plenty of real flavor without overdoing it.

This recipe uses just five ingredients you likely already have in your kitchen. Simple, fast, and delicious — fish doesn’t have to be intimidating.

I love serving mild white fish with lemon — it tastes fresh and summery, and it brings back memories of warm days by the water. When winter lingers, a bright lemon finish feels like a small luxury.

Easy Baked Parmesan Tilapia
Makes 4 tilapia fillets
Ingredients:
- 4 tilapia fillets (fresh or fully thawed if frozen)
- 3 tablespoons butter, softened
- 1/4 cup grated or shredded Parmesan cheese
- 1 garlic clove, minced
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
- Lemon slices for serving
Instructions:
- Preheat the oven to 400°F (200°C).
- Pat the tilapia dry with paper towels, then season both sides with salt and pepper. Place the fillets on a baking sheet coated with non-stick spray or a light drizzle of oil.
- Bake for 10–12 minutes, until the fish is just cooked through and flakes easily.
- While the fish bakes, combine the softened butter with the minced garlic, thyme, and Parmesan.
- Remove the baking sheet from the oven and gently turn each fillet over. Spread about 1/2 tablespoon of the butter mixture on each fillet.
- Turn the oven broiler on and place the fillets under the broiler for 2–3 minutes, or until the cheese is golden and bubbly. Watch closely to avoid burning.
- Serve immediately with lemon slices.

This dish is versatile — serve it over rice, on a bed of salad greens, in a sandwich, or alongside steamed vegetables. It’s an easy, flavorful weeknight option that comes together quickly with minimal ingredients.
