We are obsessed with these s’mores bites! Crunchy grahams, marshmallow cream, melty chocolate and flaked salt make these the perfect bite-sized snack or treat.
Can never get enough s’mores!

These s’mores bites are embarrassingly easy—and dangerously addictive. Simple ingredients and minimal effort yield a delicious, kid-friendly treat that’s perfect for summer snacking, parties, or packing in a cooler for the pool or beach.

They don’t need fancy ingredients or complicated techniques. Just crisp graham crackers, creamy marshmallow spread, melted chocolate and a pinch of flaky salt. What makes them special is the texture: the marshmallow cream stays soft and pillowy, the chocolate sets into a satisfying shell, and the graham crackers keep their crunch.

Why we love them:
- Make-ahead convenience: You can prepare a whole tray to refrigerate or freeze, so dessert is ready whenever you are.
- Bite-size portions: Perfect for kids who may not finish a full s’more and great for party platters.
- Less mess: No melting and stretching marshmallows—these are tidy and easy to transport.
- Temperature versatility: They’re delicious chilled or at room temperature.

The method is straightforward: break graham sheets into smaller pieces, spread with marshmallow cream, sandwich them, chill briefly so the filling firms, then dip halfway in melted chocolate and sprinkle with flaky salt. Chill again to set, then store in the fridge or a cooler.

These are fantastic for gatherings—arrange them on a platter with a dusting of flaky salt for a sweet-and-salty finish. They hold up well in coolers and are easy for kids to eat. The marshmallow cream remains soft and creamy, so you still get that luxurious marshmallow flavor without the brittle, cooled marshmallow sometimes found in traditional s’mores.

This recipe is more of a method than a strict formula. Use the proportions that suit your taste and the size of the graham crackers you prefer. Below is an easy version to follow that yields about 16 bites.
S’mores Bites

S’mores Bites
Ingredients
- 8 sheets graham crackers
- ½ cup marshmallow cream, or more, or less!
- ½ cup milk chocolate chips
- 1 teaspoon coconut oil (optional)
- flaked salt
Instructions
-
Break each graham cracker sheet into 4 pieces along the perforations. Spread about 1 teaspoon (or to taste) of marshmallow cream on half the pieces and top with the remaining pieces to form sandwiches. Arrange on parchment and chill in the fridge or freezer for 15 minutes to firm up.
-
Melt the chocolate chips with the coconut oil, if using, until smooth. The oil helps the chocolate set more smoothly at room temperature; omit if you prefer.
-
Dip each graham sandwich halfway into the melted chocolate, let the excess drip off, and place back on the parchment. Sprinkle lightly with flaked salt. Let the chocolate set at room temperature or speed up the process in the fridge or freezer. Store chilled until ready to serve.
