I told you I really love apples.
I love them in every form: hot or cold, shredded or baked. I even enjoy them in salads — well, as much as I can love salads.
I first saw apple nachos in the latest Taste of Home and couldn’t stop thinking about them. They’re a perfect snack: a big, crisp honeycrisp apple topped with a little chocolate, peanut butter, shredded coconut and salty pecans. Add a drizzle of caramel and a dollop of Greek yogurt, and it feels like a treat that’s also kind of healthy. Right? At least that’s how I justified it.
I spread the Greek yogurt across the apple slices and piled on the toppings. It’s such a simple idea, yet wildly satisfying — I couldn’t understand why I hadn’t made apple nachos before. If you’ve been enjoying these for years, I’m a little annoyed you didn’t tell me sooner.
While assembling the plate I meant to sprinkle everything with cinnamon, but I got distracted by the peanut butter and chocolate and forgot. I only noticed after looking at the photos. If you make these, do add cinnamon — and a little nutmeg or apple pie spice if you have it. Spices lift this snack from tasty to irresistible.
I couldn’t stop thinking about them and had to make them again for breakfast. They were such a treat. Yes, I’m obsessed — and maybe a little insecure about admitting it.

Ingredients
- 1 apple cored and sliced into thin rounds
- 1 tablespoon peanut butter
- 1 tablespoon chocolate syrup or melted chocolate
- 1 tablespoon caramel drizzle
- 2 tablespoons crushed salted pecans
- 1 tablespoon shredded coconut
- a few chocolate chips
- + anything else you want to add
Instructions

Core the apple and slice it into thin rounds. Arrange the slices on a plate, spread with Greek yogurt if desired, and add peanut butter, chocolate, caramel, pecans, coconut and chocolate chips. Finish with a sprinkle of cinnamon, nutmeg or apple pie spice to taste.
