Grilled Chicken, Peach, Blackberry + Basil Pizza
Makes 1 pizza
Ingredients:
- 1 batch pizza dough (I used half whole wheat flour)
- 1 sweet onion, sliced
- 1 tablespoon butter
- 1 teaspoon brown sugar
- 4 garlic cloves, minced or pressed
- 2 tablespoons olive oil
- 1/2 cup freshly grated mozzarella cheese
- 2 grilled boneless, skinless chicken breasts, sliced or shredded
- 1 ripe peach, thinly sliced
- 2/3 cup blackberries, coarsely chopped
- 10–15 basil leaves, chopped
- 8 ounces fresh mozzarella, sliced
Directions:
Prepare the dough according to your recipe and let it rise. While the dough rises, heat a large nonstick skillet over low heat. Add butter and the sliced onions with a pinch of salt, cover, and cook gently for about 20 minutes, stirring occasionally. Stir in the brown sugar and cook 10 minutes more until caramelized, then remove from heat and set aside.
Preheat the oven to 375°F (190°C). Shape the dough on your baking surface as desired. Brush the surface with garlic and olive oil, then sprinkle with the grated mozzarella. Arrange the grilled chicken, peach slices, chopped blackberries, basil, and caramelized onions over the cheese. Top with slices of fresh mozzarella evenly across the pizza.
Bake for 25–35 minutes, or until the cheese is melted and golden and the crust is cooked through. Finish with additional fresh basil and a light grating of Parmesan if you like. A drizzle of balsamic glaze also complements these flavors well.
