- 1 tablespoon honey
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup olive oil
Salad
- 2 cans white cannellini beans, drained and rinsed
- 4 cups arugula greens
- 1 cup pepperoncini, chopped
- 1 (14-ounce) jar roasted red peppers, chopped
- 3 ounces sliced salami, chopped
- 3 ounces crumbled feta cheese
- 1/4 cup chopped fresh basil
Instructions
- Make the dressing: whisk together the red wine vinegar, minced garlic, Dijon mustard, honey, dried oregano, kosher salt and black pepper. Slowly whisk in the olive oil until the dressing is emulsified. The dressing can be made a day ahead and stored in the refrigerator; shake or whisk again before using.
- Assemble the salad: in a large bowl, combine the drained and rinsed white beans with the arugula, chopped pepperoncini, roasted red peppers, chopped salami, crumbled feta and chopped basil. Add a pinch of salt and pepper and toss to combine.
- Dress and serve: add a few spoonfuls of the dressing and toss to coat. Taste and adjust seasoning as needed. Serve immediately, or chill and serve over the next few days, adding more dressing when serving if desired.
