Baked Brie with Cranberry, Pancetta, and Spiced Pecans for the Holidays

Oh my — brie is endlessly versatile.

This version is festive, fast, and truly easy. It comes together in minutes and makes a beautiful, crowd-pleasing appetizer.

I start with a small wheel of brie.

Use some cranberry relish or leftover cranberry sauce from your holiday spread.

If you have homemade cranberry sauce, even better — but the jarred stuff works wonderfully and is a great shortcut.

I also fry some chopped pancetta until it’s crisp.

It adds salty crunch in tiny, irresistible pieces.

For the pecans I used pre-packaged glazed pecans and crushed them in a bag, but toasted or spiced nuts you already have on hand are great, too.

The brie gets a generous layer of cranberry, then the cooled pancetta and crushed spiced pecans.

Sweet, salty, and creamy — everything you want on a single bite.

I like to arrange crackers, chips and slices of good bread alongside the baked brie. It also pairs beautifully with apple slices or other fruit.

The cheese becomes oozy and irresistible; on my last try it disappeared in minutes.

Ingredients

  • 1 wheel of brie cheese
  • 1/4 cup cranberry relish/sauce
  • 2 tablespoons chopped, fried pancetta
  • 2 tablespoons crushed spiced pecans

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a skillet over medium-high heat, fry chopped pancetta until crispy. Drain on paper towels and let cool. Crush the pecans.
  • Unwrap the brie and place it on a baking sheet. Spread the cranberry relish on top, then sprinkle the cooled pancetta and crushed pecans over the cranberry layer.
  • Bake at 400°F for 5–10 minutes, until the cheese is warm and beginning to soften.
  • Serve immediately with crackers, chips, bread, and fruit.
