It also makes a lovely party appetizer. The trick is to enjoy it as soon as it comes out of the oven while the cheese is hot and bubbly.

Ingredients

fresh mozzarella,
chopped into cubes -

roma tomatoes,
seeded and juiced -

freshly chopped basil,
or about 1 tablespoon dried, plus more for garnish
Instructions

Preheat oven to 375°F (190°C).

Remove as much juice as possible from the tomatoes to avoid a watery dip. In a small baking dish, combine the chopped mozzarella, tomatoes, and basil; mix gently to combine. Bake for 15 minutes, then broil for 2 minutes or until the cheese is bubbly and golden. Serve immediately with crackers or melba toasts.

Note: The dip can appear watery if tomatoes are too juicy, so removing excess moisture is important. This dip is best eaten right away—leftovers will release more liquid as they sit, but a little juice won’t ruin the flavor.
