  • 3 tablespoons Greek yogurt
  • 2 tablespoons grated Parmesan

  • 2 teaspoons red wine vinegar
  • 1 teaspoon anchovy paste
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lemon
  • 1/3 cup olive oil
  • Shaved Parmesan, for garnish

  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil

Instructions

  1. Tear, shred, or chop the kale and place it in a large bowl.
  2. Make the dressing by combining garlic, yogurt, Parmesan, Dijon, red wine vinegar, anchovy paste, lemon juice, salt, and pepper in a food processor. Blend until smooth, then stream in the olive oil while the processor runs until creamy. This makes more dressing than you need; refrigerate leftovers for 3–4 days.
  3. Add about 1/4 cup of dressing to the kale (use 1/3–1/2 cup if using two bunches), toss, and massage the leaves with clean hands. Let sit 10 minutes while you cook the shrimp.
