Maybe it has something to do with the pollo fundido entree I ordered last night—fried tortillas stuffed with chicken and cheese, topped with sour cream and more cheese—after three baskets of chips and salsa.

Pollo fundido indeed.

I kind of think I’m having a heart attack.

I was about to post my third bacon-infused recipe this week when it hit me I’ve been a little too friendly with pork lately. Didn’t think it was possible? Me either. My jeans say otherwise. Ho. Ly. Cow.

I just can’t do it.

Not that I’d ever envision taking a break from a crispy slice of heaven, but today I need something refreshing that doesn’t make me feel like I need a triple stent. What healthy recipes are your favorites right now? I need lightened-up goodness—something fresh, satisfying, and different from the usual kale chips or banana “nice cream.” I like those, but I’m ready for something new and delicious.
