Caramelized Apple and Cheddar Omelette Recipe for Savory Mooks

You know I love the sweet and salty combination.

I don’t usually make omelets because they tend to be full of vegetables, though they are a convenient way to sneak veggies in—especially if a generous amount of cheese is involved.

And bacon, of course.

I probably would have added bacon to this omelet, or served it alongside, except I’m out of it.

I know—that feels like culinary blasphemy. There isn’t a slice of bacon in this house. Who am I?

That said, I’m completely in love with this flavor pairing.

Sweet onions and apples with salty cheddar is just perfect. And onions count as a vegetable, right? So at least I ate a few.

Ingredients

  • 1/4 sweet onion, chopped
  • 1/4 Gala apple, chopped
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 3 eggs
  • 2 tablespoons milk
  • 1 1/2 ounces sharp cheddar cheese

Instructions

  • Heat a skillet over medium heat and add the butter. Add the chopped onion and apple, then sprinkle with salt. Sauté until the onion and apple are browned and caramelized, about 4–5 minutes. In a small bowl, whisk the eggs and milk together. Pour the egg mixture over the apples and onions and let it set, flipping once. Add the shredded cheddar in the center, fold the omelet in half, and serve.

You know what would make this even better? Browning the apples and onions in bacon grease. I’m out of that too, but next time that’s exactly how I’ll make it.
