Cheeseburger tostadas are my love language.

These crunchy, cheeseburger-inspired bites are perfect for weeknights or casual gatherings. They’re fun to eat, easy to assemble, and packed with flavor.

This recipe appears in the Everyday Dinners bonus cookbook — it’s one of my favorites and something I wanted to share as warmer weather approaches. It’s been a huge hit with family and guests.
A simple, crowd-pleasing dinner

I love deconstructed cheeseburgers — they often use ground beef instead of a thick patty and feel easier to eat. These tostadas are especially good when you need to feed a family or a crowd, and they’re straightforward to make.
They’re quick enough to prepare tonight.

Start by crisping corn tortillas in the oven (or use store-bought tostada shells). The oven method is easy; the only limitation is how many you can bake at once.
For the beef, brown it with a bit of ketchup and mustard. This doesn’t make the meat taste strongly of ketchup or mustard — it simply lends that signature cheeseburger note that makes the filling irresistible.
I also stir in a little grated cheese with the beef to add richness and keep the crumbles tender.

No cheeseburger is complete without a sauce — my house sauce is a simple riff on Chick-fil-A sauce that pairs beautifully with the beef, cheese, and crunchy tortilla. It’s great on burgers, roasted veggies, and more.
Assembly is easy: crisp tortillas, melted cheese, warm seasoned beef, a drizzle of house sauce, and whatever toppings you prefer.
Toppings make these special

I like chopped tomatoes, shredded lettuce, pickled onions, and a little relish or pickle slices. Add extra house sauce if you like. The beauty of this dish is how customizable it is — picky eaters can enjoy just tortilla, meat, and cheese, while others can load up on toppings.
It’s a crowd-pleaser because everyone can build their own perfect bite.

Ingredients
- 8 (4-inch) corn tortillas
- 1 pound lean ground beef
- 3 tablespoons ketchup
- 2 tablespoons yellow mustard
- 8 ounces sharp cheddar cheese, freshly grated
- chopped tomatoes, for topping
- shredded lettuce, for topping
- pickled onions, for topping
- pickles or relish, for topping
house sauce
- ½ cup mayonnaise
- 2 tablespoons dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon honey
- 1 tablespoon your favorite BBQ sauce

Preheat the oven to 400°F. You can use store-bought tostada shells if you prefer.

Arrange tortillas on one or two baking sheets. Brush or spray both sides lightly with olive oil and sprinkle with salt. Bake for 5–10 minutes, flip, and bake 5 minutes more until crisp. Let cool slightly before topping.

While tortillas bake, heat a skillet over medium. Add ground beef and cook until browned, breaking it into small crumbles. Stir in ketchup and yellow mustard until combined. Remove from heat and stir in a small handful (1–2 oz) of grated cheddar for extra richness.

Assemble tostadas: sprinkle each tortilla with a bit of cheese, top with warm beef, then more shredded cheese. If desired, return to the oven for a minute to melt the cheese. Drizzle with house sauce and finish with tomatoes, shredded lettuce, pickled onions, and pickles or relish.

Whisk the mayonnaise, dijon mustard, yellow mustard, honey, and BBQ sauce together until smooth. The sauce can be made a day ahead and stored in the fridge.
