- 1/4 cup red wine vinegar
- 4 garlic cloves, minced
- 1 shallot, diced
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon dried oregano
- 1/2 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 1/2 cup olive oil

- 1 pound ditalini pasta, cooked and cooled
- 6 cups chopped romaine lettuce
- 2 pints cherry tomatoes, quartered
- 8 slices bacon, cooked and crumbled
- 2/3 cup shaved parmesan cheese

- Make the dressing first: whisk together red wine vinegar, minced garlic, diced shallot, dijon, honey, oregano, salt and pepper. Slowly whisk in the olive oil until the dressing is emulsified. Let it sit while you prepare the salad. The dressing can be made a day ahead and refrigerated; shake or whisk before using.

- Place the chopped romaine in a large bowl and season lightly with salt and pepper.
- Add the cooked and cooled ditalini on top of the lettuce.
- Fold in the quartered cherry tomatoes and crumbled bacon.
- Add the shaved parmesan.
