Tender, moist chocolate chip zucchini muffins with a gentle spice—an easy, family-friendly recipe perfect for using up summer zucchini.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 1 cup granulated sugar
  • ⅓ cup avocado oil (or neutral oil)
  • ¼ cup plain Greek yogurt
  • 3 teaspoons vanilla extract
  • 1 ½ cups grated zucchini, packed
  • ¾ cup mini chocolate chips

Instructions

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  • In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt until evenly combined.
  • In a large bowl, whisk the eggs and sugar until combined. Stir in the oil and Greek yogurt, then mix in the vanilla extract.
  • Fold the grated zucchini and mini chocolate chips into the wet mixture, then gently fold in the dry ingredients until just combined. Do not overmix.
