A refreshing chopped fruit salad with lime, fresh mint and a pinch of salt—bright, simple, and perfect for summer.

Ingredients

  • 2 cups blueberries
  • 2 cups chopped strawberries
  • 2 cups chopped cantaloupe
  • 2 cups chopped mango
  • 1 cup chopped kiwi
  • 1 cup chopped pineapple
  • 1 cup chopped mandarin oranges
  • 2 tablespoons freshly squeezed lime juice
  • 3 tablespoons chopped fresh mint
  • ½ teaspoon kosher salt

Instructions

  • Chop the fruit into uniform, bite-sized pieces—use the blueberries as a guide for size. Combine all fruit in a large bowl. Add lime juice, chopped mint and a pinch of kosher salt. Toss gently to combine and coat the fruit.
  • Serve immediately for best texture and flavor. Stored in the refrigerator, the salad will keep for a day or two, but it’s best enjoyed soon after chopping.
