Hello weekend! How is it possible we’re already nearing the end of October? Time is flying.
This week I’m visiting Deer Valley in Park City, Utah, and the scenery is absolutely breathtaking. I’ve been here before, but it never gets old. Still, I can’t wait to get home and squeeze this little bug. What are your plans for the weekend? Are pumpkin carving parties actually a thing? I want to host one, but—classic me—I’m probably a few weeks late.
P.S. My current favorite: a maple bacon Brussels salad. I shared how I make it on Instagram—so delicious and worth trying.
P.P.S. I’m teaching a cooking class at Crate on Monday and there are a few spots left. If you’re nearby, come hang out!
Here are some recipes and posts I’m loving right now:
- The best ever fluffy pancakes—no questions needed, just make them.
- Toasted coconut peanut butter mousse—yes, please.
- Maria’s pantry tour—loving the colors and organization.
- Pumpkin spiced beignets—so pretty and seasonal.
- Roasted acorn squash with quinoa stuffing—looks caramelized and comforting.
- Blood orange and pomegranate thyme spritz—gorgeous and refreshing.
- Garlicky spaghetti—who wouldn’t want that?
- Kelly’s “raining men” costume—brilliant, I’ll never get over it.
- Homemade pickled ginger—clever and useful.
- No-bake caramel apple pudding with a gingersnap crust—obsessed.
- Roasted carrots with carrot top pesto—on my Thanksgiving list.
- Pumpkin skillet cake—yes, it’s a thing and it sounds perfect for autumn.
Wishing you a cozy, delicious weekend. If you try any of these recipes or host a pumpkin party, tell me how it goes!
