There’s nothing better than a warm bowl of stew on a blustery day.

This beef stew balances a rich, textured base without being overly brothy or creamy. Caramelized onions lend a sweet, savory depth that complements the beef beautifully. Hearty potatoes, chunky carrots and earthy mushrooms fill every spoonful so the stew feels substantial and satisfying.

It’s ideal to let this stew simmer slowly on the stove while the weather turns cold — perfect dinner while the snow falls or for any night you want a comforting, filling meal.

I love soups and stews in all forms, and caramelized onions are a favorite for good reason. They add a deep, savory-sweet flavor that pairs so well with beef. This stew draws on that classic combination to create something hearty, homey and full of character.

Key goals for this stew were clear: a flavorful, textured base that isn’t thin like a simple broth but also not creamy, and plenty of vegetables so each bite is loaded with different elements — soft potatoes, large carrot chunks, tender mushrooms and ribbons of caramelized onion.

This is how to make it

Start with the beef: season the pieces, toss them with a little flour, then sear in hot oil until a deep golden crust forms. Work in batches if needed so the meat browns instead of steams. Remove the seared beef and set it aside while you build flavor in the pot.

Next, caramelize the onions. Add butter to the same pot, then the thinly sliced onions with a pinch of salt. Reduce the heat and cook slowly, stirring often — true caramelization takes time but it’s worth it for the sweet, complex base it creates. The onions will pick up browned bits left from the beef, adding extra depth.

When the onions are deeply caramelized, add the carrots, celery and mushrooms and cook briefly to soften. Return the beef to the pot along with the potatoes, pour in beef stock and add sprigs of thyme. Bring to a boil, then reduce to a low simmer and cover. Let everything cook low and slow for at least an hour so the beef becomes fall-apart tender and the flavors meld.

For a thicker stew, make a simple slurry of stock and flour and whisk it into the pot, then bring to a boil until the broth reaches your desired consistency. Taste at the end and adjust seasoning before serving.

This stew is wonderful served just as it is: generous chunks of meat and vegetables in a rich, caramelized onion-infused broth. It’s the kind of meal that warms you through on a cold evening.

Ingredients

  • 1 tablespoon vegetable or canola oil
  • 2 pounds beef chuck roast, cut into pieces
  • Kosher salt and freshly cracked black pepper
  • 2 tablespoons flour
  • 4 tablespoons butter
  • 4 sweet onions, thinly sliced
  • 4 large carrots, peeled and cut into chunks
  • 4 celery ribs, chopped
  • 12 ounces baby bella mushrooms, stems removed and quartered
  • 1 pound baby gold potatoes, halved or quartered
  • 6 cups beef stock
  • 2 sprigs fresh thyme

Instructions

  • Heat the oil in a large stockpot over medium-high heat. Season the beef with salt and pepper, then toss with flour so pieces are evenly coated.
  • Sear the beef in the hot pot until each side is golden brown, 1 to 2 minutes per side. Work in batches if necessary. Remove the beef and set aside.
  • Add the butter to the same pot, then add the sliced onions with a big pinch of salt. Cook over medium, stirring often until softened, then reduce heat to low and continue to cook, stirring frequently, for about 1 hour until the onions are deeply caramelized.
  • Stir in the carrots, celery and mushrooms with a pinch of salt and cook 5 to 6 minutes to soften.
  • Add the potatoes and return the beef to the pot. Pour in the beef stock and add the thyme. Bring to a boil, then reduce to a simmer. Cover and cook for 1 to 1.5 hours, until the meat is tender.
  • If you prefer a thicker stew, whisk 1 cup beef stock with 1 tablespoon flour and stir into the pot. Bring to a boil and cook 5 to 6 minutes until thickened.
  • Remove thyme sprigs, taste and adjust seasoning. Ladle into bowls and serve hot.
