Add-ins bring brightness and a little heat: pickled jalapeños, diced red bell pepper, and scallions, all roughly the same size. A splash of fresh lime juice and a pinch of salt and pepper finish it off. Stir everything gently with a spatula—don’t puree—then chill for at least two hours or overnight.

Ingredients

  • 1 ½ cups finely grated sharp cheddar cheese
  • 1 ½ cups finely grated Monterey Jack cheese
  • ¾ cup mayonnaise
  • cup diced pickled jalapeños
  • cup diced red pepper

  • kosher salt and pepper
  • tortilla chips for serving
  • chili lime seasoning for serving

Instructions

  • Stir together the grated cheeses, mayonnaise, pickled jalapeños, diced red pepper, scallions, chopped cilantro, lime juice, and a generous pinch of kosher salt and black pepper. Mix until fully combined.
  • Cover and refrigerate for at least 2 hours, or overnight for best flavor. It’s delicious straight from the fridge, but you can let it sit at room temperature for about 15 minutes before serving if you prefer a softer texture.
