- 2 garlic cloves, minced
- 2 to 3 ears of corn, kernels cut from the cob
- 2 medium zucchini, chopped
- ½ pound long fusilli pasta (or spaghetti, bucatini, any long noodle)
- ½ cup starchy pasta water (reserved)
- ¾ cup heavy cream
- ½ cup basil pesto
- ⅓ cup finely grated parmesan cheese, plus more for serving
- Chopped fresh basil, for topping
Instructions
- Bring a large pot of salted water to a boil.
- In a large skillet over medium heat, warm the olive oil. Add the diced onion with a pinch of salt and pepper and cook 2–3 minutes until softened. Add the garlic, corn kernels, and chopped zucchini with another pinch of salt and pepper. Cook 5 minutes, stirring often, until the zucchini is tender.
- While the vegetables cook, add the pasta to the boiling water and cook according to package directions until al dente. Reserve about ½ cup of starchy pasta water before draining.
- Add the reserved pasta water and the heavy cream to the skillet with the corn and zucchini and bring to a gentle simmer. Stir in the pesto and the parmesan until combined and the sauce is silky.
