- 1 cup warm water
- 2 ¼ teaspoons active dry yeast
- 1 tablespoon honey
- 2 ½ cups all-purpose flourplus extra for your workspace
- 1 teaspoon kosher salt
- avocado oil for brushing
Quick Tzatziki
- 1 cup plain Greek yogurt
- ½ cup grated cucumber
- 1 teaspoon dried dill
- 2 garlic cloves, minced
- 1 lemon, juiced and zested
- kosher salt and pepper
Burgers
- 1 pound lean ground beef
- kosher salt and pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried dill
- crumbled or sliced feta (for topping)
- roasted red peppers (for topping)
- pickled onions (for topping)
- lettuce (for topping)
Instructions

Combine the warm water, yeast and honey in a bowl and stir once. Let sit until foamy, about 10 minutes. Stir in the flour and salt until a shaggy dough forms, then use your hands to bring it together. Place the dough on a floured surface and knead for about 5 minutes. Oil a clean bowl, place the dough inside, cover and let rise in a warm spot until doubled, about 1½ hours.

Turn the dough onto a floured surface and knead briefly. If sticky, add a bit more flour and knead until smooth. Divide into 8 equal pieces and roll each piece very thin.

Heat a cast iron skillet over medium-high heat and brush lightly with oil. Cook each thin dough round 30 seconds until bubbles form, flip and cook 1–2 minutes until puffy with golden spots, then flip and cook another minute. Keep warm or reheat in the oven before serving.
Quick Tzatziki

Whisk the Greek yogurt, grated cucumber, dill, minced garlic, lemon zest and juice together. Season with salt and pepper to taste. Refrigerate to let the flavors meld if you have time.

Season the ground beef with kosher salt, pepper, garlic powder, oregano and dill. Mix gently to combine and form into six patties.

Heat a cast iron skillet over medium-high and cook the patties to your desired doneness, or grill them. When nearly done, top each patty with crumbled or sliced feta and cover for 1–2 minutes to melt. Serve the burgers in warm pita with tzatziki and your favorite toppings.
