This creamy pancetta gnocchi is perfect for holiday gatherings—cozy, comforting and finished with Parmesan and sun‑dried tomatoes.

Ingredients

  • 4 ounces diced pancetta
  • ½ sweet onion, diced
  • 3 garlic cloves, minced
  • Kosher salt and pepper, to taste
  • ½ cup chopped sun‑dried tomatoes, patted dry
  • ½ cup dry white wine
  • 1 ½ cups heavy cream
  • 16 ounces uncooked potato gnocchi
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  • Heat a large skillet or saucepan over medium‑low. Add the pancetta and cook until some fat has rendered but it’s not fully crisp. Stir in the diced onion and garlic and cook, stirring often, until the onion is soft and the pancetta is fully crispy, about 6 to 8 minutes.
  • Stir in the sun‑dried tomatoes and cook for about 5 minutes. Season with a pinch of salt and freshly cracked black pepper. Pour in the white wine to deglaze the pan, scraping up any browned bits.
  • Add the heavy cream and bring the mixture to a gentle simmer. Stir in the gnocchi, cover the pan and cook for about 5 minutes, stirring once or twice. Remove the lid and check the gnocchi; if still firm, cook 1–2 minutes longer until tender.
  • When the gnocchi are cooked through, stir in the Parmesan until melted and the sauce is creamy. Add a splash more cream if needed to reach your desired consistency.
  • Serve immediately topped with torn fresh basil and more cracked black pepper.
