You might be reading this and thinking these home fries are healthy because they’re made with sweet potatoes. Fair assumption.
But wait a second.
I need to confess something.
I fried them in bacon grease.

And when I say “may,” I mean I absolutely did — and it was totally worth it.
Full disclosure: I don’t always fry my bacon. Baking it on a wire rack is easier, less messy, and keeps me from getting splattered by hot grease. I often let the drippings fall onto the sheet below and then, yes, I used to toss them out. This made my family gasp — in our house throwing away bacon drippings is practically heresy.
Yesterday I decided to fry the bacon the old-fashioned way. It tastes so much better. I poured the drippings into a jar and tucked them in the back of the fridge, ready to make anything better for the next week or so.

Ingredients
- 1 large sweet potato, chopped
- 1/4 sweet onion, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon smoked paprika
- 1 tablespoon olive oil, or bacon grease!
Instructions

Heat a skillet over medium. Add the oil or bacon grease and the chopped onion. If you prefer your onions soft rather than browned and crispy, add them after the potatoes have cooked halfway. Season the sweet potato with salt, pepper and smoked paprika.

Add the sweet potato to the skillet. Let it brown on one side before flipping so you get nice, caramelized edges. Continue cooking until tender and evenly browned.
