I know — irresistible.
With Cinco de Mayo and the weekend nearly here, it’s the perfect time to cook a few standout recipes. Start with crockpot short rib tacos for rich, melt-in-your-mouth flavor, move on to pulled pork tacos with sweet chili slaw, and finish with beer-battered fish tacos topped with margarita mango salsa and jalapeño crema. Wash it all down with creamy coconut creamsicle margaritas for a fun twist. I rarely post two cocktails in a short span, but when two holidays that revolve around signature drinks collide, it’s worth it. These drinks felt necessary — bright, spicy and refreshing.

I almost made the classic beergaritas — the frozen limeade plus a light beer kind — which I still enjoy occasionally. But I couldn’t resist swapping in ginger beer. I’ve been obsessed with ginger lately, especially ginger beer and ginger syrup. After making cranberry ginger margaritas last holiday season, I’ve found I want that gingery warmth in everything.

These beergaritas are based on my favorite margarita formula with a small splash of orange liqueur for depth. The ginger beer keeps the cocktail lively and gives it a subtle kick, while the hint of orange rounds the flavors.

Ingredients
For a single serving
- 4 ounces ginger beer
- 2 ounces lime juice
- 1 1/2 ounces tequila (gold is my preference with ginger beer)
- 1/2 ounce Grand Marnier (or triple sec)
- 1/2 ounce ginger simple syrup
- fresh lime wedges for garnish
- coarse salt for the rim
For a pitcher (serves about 4)
- 2 cups ginger beer
- 1 cup lime juice
- 1/3 cup tequila
- 1/4 cup Grand Marnier
- 1/4 cup ginger simple syrup
Ginger syrup
- 1/2 cup water
- 1/2 cup granulated sugar
- 1 thumb-sized piece of fresh ginger

Chill your glasses in the freezer for a few hours or overnight—frosty glasses make these extra delicious. I recommend mixing a single serving first and tasting, then adjusting tequila, syrup or lime to your preference. Everyone likes their drinks a bit different.

Before serving, rub a lime wedge around the rim and dip in coarse salt. Fill the glass with a few ice cubes. In a shaker with ice, combine ginger beer, lime juice, tequila, Grand Marnier and ginger syrup and shake gently to combine. Pour over ice, garnish with a lime wedge and enjoy.

To make the syrup, combine water, sugar and sliced or grated ginger in a small saucepan over medium heat. Whisk until the sugar dissolves and the mixture simmers, then cook for a minute or two. Remove from heat and let cool completely. Store sealed in the refrigerator for several days.
