You guys! Green Goddess margaritas might be my new favorite thing.

They’re fun, incredibly refreshing, and taste amazing with a salty rim. Perfect for Saint Patrick’s Day — a far better choice than green beer.

The base is fresh green juice. There are lots of green margarita variations — for example, there’s a creamy frozen avocado version in The Pretty Dish — but this one is bright and fresh, made with cucumber and lime. It’s light, spring-like, and seriously green. Because it’s so green, we can pretend we’re drinking vegetables and justify it as “healthy.”
I’ve also been obsessed with edible gold leaf lately. It’s delicate and a little tricky to use, but it turns these drinks into a tiny lucky pot of gold — a festive touch for the holiday.

The main flavors are cucumber and lime, boosted by a bit of Grand Marnier and tequila, rounded out with simple syrup. If you want to up the vegetable factor, you can add celery juice, but that’s optional and not for everyone.

You don’t have to use gold leaf — it’s a pretty flourish for the holiday, but the drink is excellent without it. And yes, this is a perfectly acceptable excuse to have green juice for dinner.

Ingredients
- 3 ounces fresh cucumber juice
- 2 ounces Grand Marnier
- 1 1/2 ounces tequila
- 2 ounces fresh lime juice
- 1 1/2 ounces simple syrup
- lime slices and wedges for garnish
- coarse salt for the rim
- edible gold leaf for garnish (optional)
Instructions

Make the cucumber juice by juicing a long seedless cucumber or blending it and straining the pulp.

Spread coarse salt on a plate. Rim each glass with a lime wedge and dip in the salt, then fill the glass with crushed ice.

In a cocktail shaker with ice, combine the cucumber juice, Grand Marnier, tequila, lime juice, and simple syrup. Shake at least 30 seconds, then pour over the crushed ice. Garnish with lime slices and add a few pieces of edible gold leaf if desired.
