Salmon burgers are a regular at our table. Eddie isn’t always wild about salmon when it’s grilled or broiled; he often prefers milder white fish or shellfish. But turn salmon into a burger and he’s immediately in.

The green goddess sauce and avocado might take a little convincing, but they do the trick.

That green goddess sauce is everything.

I developed a version of this for my next cookbook a few months ago and have been obsessed with it ever since. I can’t wait to share the full recipe from the book, but in the meantime these salmon burgers with green goddess are the perfect way to get a bright, satisfying meal on the table.

And yes — lots of avocado, naturally.

There’s actually double avocado: sliced avocado on the burger plus avocado in the green goddess sauce. I’m unabashedly addicted to avocado and proud of it.

Salmon burgers can be tricky because, with avocado and sauce, bites can become a bit soft in texture. My favorite salmon burgers to date are the crispy tortilla-crusted chipotle sliders — the crunch is incredible — and I still love adding chips to sandwiches for contrast. If you’re craving texture, add a few crushed chips or a lightly crisped coating to the patties.

What I love most about these burgers is how the green goddess sauce brightens everything up. It tastes fresh and vibrant while also feeling a little indulgent, even though the sauce isn’t heavy. And it’s green, so it feels wholesome too.

Ingredients

Green Goddess Sauce

  • 1 avocado
  • 2/3 cup plain Greek yogurt (full fat or 2%)
  • 1/3 cup mayonnaise
  • 2 garlic cloves
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil
  • 2 tablespoons snipped chives
  • 1/2 lemon, juiced
  • salt and pepper, to taste

Salmon Burgers

  • 1 pound boneless salmon fillet
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/3 cup seasoned bread crumbs
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 3 to 4 tablespoons olive oil
  • sliced avocado for topping
  • butter lettuce for garnish
  • buns, toasted if desired

Instructions

Green Goddess Sauce

  • Add all sauce ingredients to a food processor and blend until smooth and combined. Taste and adjust salt, pepper or lemon as needed.

Salmon Burgers

  • Place the salmon (cut into pieces) in the food processor and pulse until broken into small pieces but not fully pureed. Transfer to a large bowl. Add shallot, garlic, egg, bread crumbs, smoked paprika, salt, pepper, basil and parsley. Stir to combine, then bring the mixture together with your hands and form into 4 burgers or 8 sliders to fit your buns.
  • Heat a large skillet over medium and add 2 tablespoons of olive oil. Cook burgers in batches until golden, about 2 to 3 minutes per side. Reduce heat to low and cover for a minute or two if needed so the centers become opaque and cooked through.
  • To assemble, place butter lettuce on the bottom bun, add the salmon burger, top with sliced avocado and a generous spoonful of green goddess sauce. Serve immediately.
