Ingredients

Green Goddess Dressing

  • ⅓ cup plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 2 garlic cloves
  • ⅓ cup baby arugula or spinach
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon snipped chives
  • 1 tablespoon freshly squeezed lemon juice
  • Pinch crushed red pepper flakes
  • Big pinch kosher salt and pepper

Slaw

  • 1 small head green cabbage
  • 2 large carrots, finely grated
  • 1 red onion, thinly sliced
  • ¼ to ⅓ cup green goddess dressing

Burgers

  • 1 pound lean ground turkey
  • Kosher salt and pepper
  • 4 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 large egg, lightly beaten
  • ¼ cup seasoned breadcrumbs
  • 1 tablespoon olive oil
  • 4 to 6 buns, for serving

Instructions

Green Goddess Dressing

  • Add all dressing ingredients to a food processor or blender and blend until smooth and combined.

Slaw

  • Combine cabbage, grated carrots, and sliced onion in a large bowl. Toss with the green goddess dressing until well coated. Refrigerate until ready to serve.

Burgers

  • Season the ground turkey with salt and pepper. Add the green onions, minced garlic, beaten egg, and breadcrumbs. Mix gently until just combined—do not overmix.
  • Form into four patties, or six smaller patties if preferred.
  • Heat the olive oil in a skillet over medium heat. Cook the burgers until deeply golden on both sides, about 5 minutes per side, until the internal temperature reaches 160°F (71°C).
  • To assemble, spread green goddess dressing on the buns, top with a burger, add a generous scoop of slaw, and finish with the top bun. Serve immediately.
