- 4 skinless salmon fillets
- Kosher salt and freshly ground black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 3 ears corn, kernels cut off the cob
- 2 jalapeño peppers, seeded and diced (adjust for heat)
- 1/3 cup chopped fresh cilantro
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 2 avocados, chopped
Instructions
- Heat the grill to high. Pat the salmon dry with paper towels.
- In a small bowl, mix a generous pinch of salt and pepper with the smoked paprika and garlic powder.
- In a large bowl, combine the corn kernels, diced jalapeño, chopped cilantro, and lime juice. Season with a big pinch of salt and pepper and set aside to let the flavors meld.
- Sprinkle the paprika-spice mix over both sides of the salmon. Place the fillets on the hot grill and cook for about 4 minutes without moving them. Flip and grill for another 3 to 4 minutes, depending on thickness, until the salmon is cooked through and flakes easily. Transfer to a plate.
- Add the chopped avocado to the corn mixture and gently toss. Taste and adjust seasoning with more salt, pepper, or lime juice as needed.
