Lots of my favorite meatless options this week, and we finish things off with pizza.

What To Eat This Week
Start the week with winter citrus butter salmon served over rice and paired with a simple side such as bacon roasted carrots for a bright, satisfying dinner.
Next up: pizza stuffed shells. This comforting, crowd-pleasing meal is perfect for leftovers and makes for an easy, indulgent weeknight option.
Midweek, try a salsa chicken quinoa pot. It comes together quickly and is great when topped with fresh additions like avocado, cilantro, or a squeeze of lime.
For pure comfort, make chickpeas and dumplings. It’s a cozy, warming bowl—if you prefer, you can swap in the creamy chicken and buttermilk dumplings version instead.
Light but filling, halloumi hummus bowls are a delicious vegetarian meal that balances salty, creamy, and fresh elements in every bite.
For the weekend, I recommend a veggie supreme Detroit-style pizza. It’s one of our favorite pizzas to make at home—crispy edges, airy interior, and plenty of toppings.
For breakfasts this week, I’m in a pumpkin mood, so I’ll be having cinnamon toasted pumpkin pie oatmeal. For lunches, Tuscan tuna melts are quick, flavorful, and easy to pack.
